Mexican-style drumsticks
  1. Roast all of this together in a saucepan with some olive oil, or in an 400F oven.

  2. Once they're nice and toasted, move them to a blender with a ½ cup of water. Add in a pinch of dried oregano

    pinch of whole cumin (3-4 seeds) 1 teaspoon of salt ( add more to taste). Or keep in pot and use immersion blender. Add tomato paste, chilis in adobo, chili powder, or other things to adjust the taste.

  3. In a new saucepan, you will add a tablespoon of olive oil and a clove of garlic. Add in the drumsticks, seasoned with salt and pepper. Sear them for some nice browning.

  4. Once they're cooked, mix in the sauce you blended and cook on medium heat until the sauce thickens. Taste for salt.
