Mom's Famous Cream Puffs
  1. Preheat oven to 400 degrees F (200 degrees C).

  2. In a medium saucepan, combine water and butter. Bring to a boil, stirring until butter is melted.

  3. Reduce heat to low and add flour and salt. Stir vigorously until mixture forms a ball.

  4. Remove from heat and let cool for 5 minutes.

  5. Add eggs one at a time, beating well after each addition, until smooth.

  6. Drop by spoonfuls onto a greased baking sheet.

  7. Bake for 30 to 35 minutes, or until puffed and golden brown.

  8. Cool on wire racks. Slice off tops, fill with desired filling, replace tops, and dust with powdered sugar.
