Presoak buckwheat groats for an hour in warm water.
Place all the ingredients in a blender, and process until you get a smooth battery consistency.
Let the batter rest for a minute to thicken up.
Then decide if you need to add extra water or not depending if you make pancakes or wraps.
Fry into pancake shapes on a pre-heated frying pan. (you may want to use a tablespoon to spread the mix over the pan as it can get slightly thicker)
Fry for a minute on each side until slowly starts browning up.
Serve with any favourite, savoury filling.
Store in an air-tight container if you want to use the fried wraps the following day.
