Vegetarian Pasta Salad With Grilled Vegetables
  1. Drizzle veg with olive oil and grill until you get those good grill marks.

  2. Meanwhile, cook the pasta to al dente according to your package directions.

  3. Make a dressing with ingredients to taste: 1 shallot thinly sliced or minced, garlic, olive oil, lemon juice, thinly sliced basil, dried thyme, and optionally, red pepper flakes. Shake or mix to blend.

  4. Once veggies are done, mix the cooked pasta in a bowl with your veggies and dressing.

  5. Top with burrata and some thinly sliced basil.
