Sun-dried Tomato And Cheese Muffins
  1. Preheat oven to 160°C

  2. Oil a 12-hole muffin tin

  3. In a large bowl, mix all dry ingredients

  4. In a separate bowl, whisk milk, yoghurt, oil & egg

  5. Combine wet with dry (don't overmix!)

  6. Fold in cheese, sun-dried tomatoes, pepper & chives

  7. Spoon into muffin tin & bake 22–25 mins

  8. Let them cool (if you can resist) & serve with butter
