Whisk coconut aminos, coconut sugar, fish sauce, garlic, pepper, & oil in a large bowl.
Add chicken to the bowl & coat in the marinade for 20-30 minutes (or overnight in the fridge).
Heat oil in a large skillet or cast iron over medium heat.
Once hot, remove chicken from marinade & sear for 5-6 minutes on each side.
Remove from heat & cool for 10 minutes before slicing.
Whisk dressing ingredients together.
Assemble bowls adding noodles to the bottom, sliced chicken, veggies, & a handful of herbs.
Add a few spoonfuls of dressing on top with crushed peanuts.
Mix together & enjoy.
