One-Pan Baked Chicken Drumsticks with Potatoes and Tomatoes
Preheat oven to 375°F
Pat chicken dry and toss with lemon juice and sea salt in a baking dish. Marinate for 10-15 minutes (longer if you like) while you prep veg.
Transfer chicken to a bowl temporarily leaving the residual juice in the baking dish, then add potatoes, onion, beans, tomatoes, and lemon skins to the baking dish and combine. Sprinkle with parsley and olives.
Place marinated chicken back on top. Drizzle with olive oil, season with salt and pepper.
Bake for 60-70 mins until chicken is cooked and potatoes are tender.
Rest for 5 minutes before serving.
