In a skillet over medium heat, brown the ground beef with diced onion and garlic until fully cooked. Drain excess fat.
Stir in taco seasoning, black beans, corn, diced tomatoes with green chiles, and tomato sauce. Let it simmer for 2–3 minutes, just to blend the flavors.
Lightly grease the inside of your Crockpot. Spread a layer of cooked rice or crushed tortilla chips on the bottom.
Pour the beef mixture over the base layer and stir gently to combine. Sprinkle shredded cheese on top.
Cover and cook on low for 4–5 hours or high for 2–3 hours, until hot and bubbly.
Serve warm with your favorite taco toppings. Let everyone build their own perfect plate!
