Heat your Blackstone to High Heat. Using a large saute pan, add the sugar, bourbon, apple juice, and maple syrup. Stir to incorporate and bring to a simmer. Cook for 5-7 minutes or until the liquid begins to thicken.
Remove from the heat and allow to cool slightly.
Add the butter to the griddle with a bit of olive oil. Add the sliced apples and sear for 1 minute then flip and repeat. Cook for a little longer to caramelize if needed. (if you cook the apples too long, they will get mushy and fall apart)
To plate, stack and alternate between red and green apple slices. Add some of the granola to the center of the stacked apples and then ice cream over the top. Add a drizzle of the sauce and a light dust of cinnamon. Serve immediately.
