Toss pork in fish sauce, then the 1.5 tbsp cornflour. Add ½ cup cornflour, coat pork (separate), then squeeze lightly in fist to make it stick well. Place in colander, shake off excess.
Heat oil – check by dipping pork in, should sizzle straight away. Add half pork, keep them separated. Cook 3 min in total as follows – 1 min on the first side until golden, then flip. Remove onto paper towel lined tray, cook 2nd batch.
Pour out oil, give pan a quick wipe. Add Sauce ingredients, simmer 2 min on medium / med high. Add pork, quick toss, serve over rice!
