Tofu + Shirataki Noodle Salad With Spicy Peanut Dressing
  1. Prepare the dressing. In a bowl, combine the peanut butter, soy sauce, coconut aminos, toasted sesame oil, rice vinegar, lime juice, sriracha/zhong sauce, and maple syrup. Whisk well. Taste and adjust for seasoning. You can also add grated ginger and/or garlic if you like.

  2. Assemble the salad. In a large bowl, combine the lettuce, cucumber, carrot, herbs, noodles, protein of your choice, herbs, and micro greens if using. Pour as much dressing as desired and toss well.
