Chinese Fried Shrimp
  1. In a bowl, combine the flour, starch, baking powder, seasoned salt, pepper, and optional cayenne pepper.

  2. Gradually add water or a mixture of beer and soda water to the dry ingredients, mixing until you achieve a smooth batter.

  3. Pat the shrimp dry and coat them thoroughly with the prepared batter.

  4. Heat oil in a large wok to approximately 400°F (200°C).

  5. Carefully add the battered shrimp to the hot oil and shallow fry until the batter starts to set.

  6. 2nd fry, Lower the oil temperature to about 350°F (175°C) and continue frying the shrimp until they turn golden and crispy.

  7. Once cooked, remove the shrimp from the oil and let them drain on paper towels before serving.
