Add everything except diced apple and caramel sauce to a food processor or high powered blender and blend until smooth
Add the diced apple, reserving a little for topping, to mixture, and mix
Pour into silicone molds
Top each one with extra diced apple
Bake on 350 F for 15-17 minutes
Let cool for 5-10 minutes
To a small sauce pan on medium low heat, add all the ingredients for caramel sauce, whisk until combined, and sauce thickens. Remove from heat and let cool
Drizzle the top of the cooled pancake bites with the caramel sauce
Keep stored in and airtight container in refrigerator or freezer
