Gently remove the top layer of parchment
Using an offset spatula, spread an even layer of cashew butter over the dates
Sprinkle pecans over cashew butter and press in
Melt dark chocolate chips with coconut oil until smooth
Spread melted chocolate evenly over pecan layer
Sprinkle with Maldon salt
Refrigerate to set, then cut into squares
For Cookie Dough Stuffed Dates: Mix almond flour, oat flour, maple syrup, cashew butter, vanilla extract, and salt until smooth
Add oat milk to thin if necessary
Stir in mini chocolate chips
Stuff date halves with cookie dough filling
Drizzle with melted chocolate and top with mini chocolate chips and flaky salt
Keep in fridge or freezer
