Add lean ground beef to a pan with cooking spray and cook on high heat until halfway done
Add taco seasoning, diced white onion, and bell pepper, stir until soft
Add fajita sauce and mix well
For the rice: add light butter to a pan, then add washed rice
Add tomato paste and seasonings to the rice
Add chicken stock and bring to a bubble
Simmer rice for 15 minutes until fully cooked
On a warm tortilla, add ⅙th of the rice and ⅙th of the beef
Add low fat cheese and fold in the sides
Roll into a burrito and repeat for six burritos
Toast to seal the burritos
Store in the freezer and reheat when ready to eat
