Either crumble the tofu in a bowl and knead with your hands until it forms a dough or blend in a food processor until it forms a dough.
Divide into 10 pieces and roll into noodles (keep them shorter than the ones shown as they may break while boiling).
Cook the noodles in salted water until they float on top.
For the sauce, mix the peanut butter, lime juice, soy sauce, maple syrup, and sriracha (optional).
Toss the cooked noodles in the sauce and serve.
