Cheesy Potato Muffin Cups
  1. Preheat oven to 375°F

  2. Slice gold potatoes into 1/16th inch thin slices

  3. Mix together melted butter, chopped garlic cloves, thyme, rosemary, salt, and pepper

  4. Add potato slices to the butter mixture and coat well

  5. Grate Gruyere cheese and Parmesan cheese

  6. Layer potato slices into a muffin tin, alternating between layers of potato and layers of cheese, aiming for 3-4 layers of cheese

  7. Cover with foil and bake for 25 minutes or until potatoes are soft all the way through

  8. Uncover and increase oven temperature to 425°F

  9. Bake until brown and crispy

  10. Serve with extra thyme and sea salt
