Garlic Parmesan Chicken With Roasted Vegetables
  1. Preheat your oven to 400°F (200°C).

  2. In a small bowl, whisk olive oil, garlic, Parmesan, Italian seasoning, paprika, salt, and pepper.

  3. Place chicken on a sheet pan and coat evenly with half of the mixture.

  4. Toss potatoes and broccoli in the remaining mixture; spread around chicken.

  5. Bake for 25–30 minutes or until chicken reaches 165°F and vegetables are tender.

  6. During the last 5 minutes, scatter cherry tomatoes on the pan to roast.

  7. Let rest, garnish with fresh parsley, and serve hot.
