Preheat your oven to 400°F (200°C).
In a small bowl, whisk olive oil, garlic, Parmesan, Italian seasoning, paprika, salt, and pepper.
Place chicken on a sheet pan and coat evenly with half of the mixture.
Toss potatoes and broccoli in the remaining mixture; spread around chicken.
Bake for 25–30 minutes or until chicken reaches 165°F and vegetables are tender.
During the last 5 minutes, scatter cherry tomatoes on the pan to roast.
Let rest, garnish with fresh parsley, and serve hot.
