Sprinkle gelatin powder evenly over cold water in a small bowl. Let sit for 5 minutes until sponge-like.
Pour hot herbal tea over bloomed gelatin. Stir continuously until fully dissolved and smooth.
Slowly whisk in whey protein isolate or collagen peptides until completely incorporated without lumps.
Add lemon juice, sweetener, and optional cranberry juice or apple cider vinegar. Stir well.
Pour mixture into silicone molds or small cups.
Refrigerate for 2–3 hours until fully set.
Serve one ½ cup portion as a high-protein, low-calorie snack.
