Porkbelly Adobo
  1. Fry the pork belly chunks on all sides to develop a nice sear

  2. Add in the bay leaves, crushed garlic, whole black peppercorns and brown sugar

  3. Let the aromatics toast and allow the sugar to caramelize

  4. Pour in the soy sauce, vinegar and water

  5. Let the mixture simmer for at least 45 minutes

  6. Bring the mixture to a boil and reduce the liquid into a sticky, thick sauce

  7. Serve immediately or let it sit in the fridge overnight
