Melt the butter in a large skillet or wok over medium heat.
Slice the onion products thinly. Put them in the butter to soften and caramelize (they should get quite dark brown). Cut the chicken into bite-size pieces.
Brown the chicken in the pot, then add garlic, ginger, and spices. Let bloom for a minute or so, until your kitchen smells amazing. Add water, tomatoes, and lemon juice. Adjust seasoning and lower heat to a simmer, then let simmer for 15-20 minutes.
Mix some tomato sauce into yogurt and cream, then add back to the pot. Add raisins, cilantro, and almonds. Simmer for a few more minutes.
Serve over rice.
