Mix all the ingredients for the marinade in a large bowl. Add the sliced chicken and coat well. Let it marinate for 15–20 minutes.
Meanwhile, in another bowl, mix together the ingredients for the satay sauce until smooth.
Heat a large pan or wok over a medium-high heat.
Add a little oil, then stir-fry the marinated chicken for 2–3 minutes, until golden and mostly cooked through.
Add the peppers, onion, green beans and garlic, and stir-fry for another 2–3 minutes, until the vegetables are tender but still crisp.
Pour the satay sauce over the chicken and vegetables. Reduce the heat to medium and simmer for 3–4 minutes, stirring occasionally, until the sauce thickens slightly and the chicken is tender.
