Crispy Parm Potatoes With Whipped Feta Dip
  1. Preheat oven to 200°C. Line a baking sheet with a sheet of parchment paper.

  2. Drizzle olive oil followed by a generous sprinkle of Parmesan on top.

  3. Add sliced potatoes cut-side down, all touching in a row.

  4. Drizzle with a bit more olive oil on top and a sprinkle of sea salt to taste.

  5. Bake for ~30 minutes or until potatoes are golden brown and the cut side is crispy!

  6. For the whipped feta dip: Add all ingredients to a food processor.

  7. Blend until fully smooth.

  8. Transfer to a serving dish and garnish with a drizzle of olive oil, fresh herbs, or put the potatoes on top.

  9. Enjoy!
