Fill ⅔ of a baking sheet with tomatoes and ¼ yellow onion
Add a few slices of bell pepper and a couple halved heads of garlic
Cover everything with olive oil and sprinkle generously with salt
Bake in the oven at 400°F for 35 to 40 minutes until roasted
Squeeze out the garlic and scrape the bottom of the pan to collect extra bits
Add everything to a pot along with fresh basil
Blend until smooth
Add an optional splash of heavy cream and season to taste
