Tortellini Soup
  1. Cut 1 cup of cherry tomatoes in half

  2. Chop 1 tablespoon fresh parsley

  3. Chop 2 tablespoons fresh basil

  4. On Med-High, heat up 1 tablespoon of olive oil (or avocado oil)

  5. Add 1 lb of ground beef (or ground turkey)

  6. Add crushed pepper flakes, Italian seasoning, paprika, onion powder, garlic powder, salt & pepper (about teaspoon of each, but this is really preference)

  7. Brown the meat for 7-10 mins (or until cooked)

  8. Set meat aside

  9. Leave all juices in pot & turn down to low medium

  10. Add in 2 tablespoons of butter to same pot

  11. Once butter is melted, add in 1 tablespoon garlic, cup of cherry tomatoes, and 3 tablespoons tomato paste for a couple of mins or until garlic is browned

  12. Add 3 cups of heavy cream, stir

  13. Add 4 cups of chicken stock or broth, stir

  14. Add 2 tablespoons of room temp cream cheese, ¼ cup sun-dried tomatoes, ¾ cup of parmesan. Mix together

  15. Bring back to a boil

  16. Add in 10oz of cheese tortellini and add meat back in

  17. Cook tortellini based on time of the package

  18. Add cup of spinach and the chopped parsley and basil

  19. Season with salt and pepper

  20. Scoop into bowl and add more parm, crushed pepper and parsley to your liking!
