Mix together French onion soup mix, Dijon, tomato paste, garlic, thyme, Worcestershire sauce and beef stock.
Add chopped onions & carrots to the base of the slow cooker.
Sear beef in a hot pan for 2-3 minutes each side. Place the beef in the slow cooker (add straight from packet if you don’t want to sear, doing so gives an extra depth of flavour to this dish).
Pour liquid mixture over the beef.
Cook on LOW for 7-8 hours or HIGH for 4–5 hours until the beef is fall-apart tender.
Remove bay leaves & shred the meat using 2 forks.
Thicken the gravy with a cornflour slurry if desired OR leave lid off for final 45 minutes.
