Fry the red onion and garlic in a frying pan.
Cut the spinach and place in a pan, adding salt and pepper.
Cook for about 10 minutes.
Beat the eggs with milk, flour, salt and pepper.
Add spinach, mozzarella and parsley.
Place the mixture in an oiled baking tray and sprinkle with parsley and sweet provolone.
Bake at 180°C/356°F for about 30 minutes, then it’s ready!
