Preheat your oven to 375°F and lightly spray an oven-safe dish with avocado oil.
Crack 8 large eggs directly into the dish and add 5 oz diced cooked chicken.
Add ½ cup finely diced broccoli, ½ cup finely diced spinach, and 2 thinly sliced scallions.
Scoop in 2 servings of 2% cottage cheese and season with 1 tbsp smoked paprika, 1 tbsp thyme (or oregano), and a couple pinches of salt and pepper.
Mix everything gently right in the dish until evenly combined, then top with 1 oz finely grated parmesan.
Bake in the oven for 40 minutes.
Remove from oven and let cool for 20-30 minutes.
Cut into desired portions and top with your favorite sauce before serving.
