Homemade Brioche
  1. Mix T55 flour, sugar, salt, and fresh yeast together on stand mixer

  2. Add eggs and milk to the dry ingredients

  3. Incorporate butter into the dough at the end.

  4. Mix with dough hook and Knead until the dough is smooth and uniform

  5. Then slap and fold and pre shape

  6. Rest in fridge to make easier to shape

  7. Shape, allow to rise until doubled, brush with melted butter (or eggwash?) and bake until golden brown 20-25mins at 180
