Chimichurri
  1. In a bowl, combine the shallot, garlic, red wine vinegar and lemon juice. Let it sit for 10 minutes, this will take the sharp rawness out of the garlic and shallot.

  2. Add the remainder of the ingredients and stir together. Taste for seasoning, adjust accordingly, and serve.
