Same-day Chocolate Croissants
  1. Add the milk, sugar, and yeast into a bowl and let sit for 5 minutes

  2. In a large bowl add flour, salt, and the yeast mixture

  3. Mix and add in 1 stick of butter, 1 tablespoon at a time

  4. Knead for 5 minutes and set aside for 1 hour

  5. Roll the remaining 2 sticks of butter into a rectangle between 2 pieces of parchment paper

  6. Set the butter in the refrigerator for 10 minutes

  7. After the dough has rested for 1 hour, roll it out

  8. Put the butter in the center and fold both sides in, meeting in the middle

  9. Remove the edges so there are 3 even layers

  10. Fold into thirds and set in the freezer for 20 minutes

  11. Remove from the freezer, roll out slightly, and fold into thirds again

  12. Repeat the folding process one more time before rolling flat

  13. Cut the dough into even rectangles

  14. Add a piece of chocolate to the center of each rectangle and roll

  15. Brush with egg wash and bake at 400°F for 15 minutes or until golden
