Add the milk, sugar, and yeast into a bowl and let sit for 5 minutes
In a large bowl add flour, salt, and the yeast mixture
Mix and add in 1 stick of butter, 1 tablespoon at a time
Knead for 5 minutes and set aside for 1 hour
Roll the remaining 2 sticks of butter into a rectangle between 2 pieces of parchment paper
Set the butter in the refrigerator for 10 minutes
After the dough has rested for 1 hour, roll it out
Put the butter in the center and fold both sides in, meeting in the middle
Remove the edges so there are 3 even layers
Fold into thirds and set in the freezer for 20 minutes
Remove from the freezer, roll out slightly, and fold into thirds again
Repeat the folding process one more time before rolling flat
Cut the dough into even rectangles
Add a piece of chocolate to the center of each rectangle and roll
Brush with egg wash and bake at 400°F for 15 minutes or until golden
