In a 1-quart glass jar, layer the dry ingredients in this order: the flour mixture, brown sugar, granulated sugar, rolled oats, butterscotch chips, and coconut flakes.
To Make the Cookies
In a large bowl with an electric mixer, beat the ½ cup unsalted butter, softened until soft and fluffy. Blend in the 1 large egg and ¾ teaspoon vanilla until combined.
Add in all the dry cookie mix and blend well.
Drop by rounded tablespoons 2-inches apart onto a parchment-lined cookie sheet.
Bake at 350 degrees F. for 9-11 minutes, until golden. Cool for 2 minutes, then transfer to a wire rack to cool completely.
