Let rest for 10 minutes
Apply Killer Augs AP seasoning to both sides
Let rest for 10 more minutes
Apply Meat Church Texas sugar seasoning
Smoke on Char Griller Gravity 980 using cherrywood at 225°F until internal temperature reaches 145°F
Rest for 15 minutes
Slice and serve
