Lemon Loaf
  1. Preheat the oven to 325º

  2. Stir together flour, baking powder, and salt in a bowl and set aside

  3. Cream butter and sugar together until light

  4. Beat in eggs, sour cream, lemon zest, lemon juice, and lemon extract

  5. Add flour mixture and stir together until completely combined

  6. Pour into a greased 4x8 or 5x9 inch loaf pan and bake for about 60 minutes or until a toothpick inserted in the center comes out clean

  7. Remove from oven and let rest for 10 minutes

  8. Loosen the edges of the loaf from the pan with a butter or icing knife, and turn the loaf onto a wire rack to cool completely

  9. Combine glaze ingredients until smooth

  10. Drizzle glaze over cooled lemon loaf, and spread with the back of a spoon

  11. Slice and serve!
