Melt the cheese base: Heat 1 Tbsp of cooking oil over medium-low heat. Add Swiss cheese, Colby Jack cheese, and egg yolk.
Build the flavor: Add mayonnaise, paprika powder, Italian seasoning, and almond flour. Stir gently until smooth and creamy.
Cook the noodles: Pour in heavy cream and water, then add the noodles and chopped garlic. Cover with a lid and bring to a boil.
Thicken the sauce: Remove the lid and add Parmesan cheese, salt, and pepper. Stir well and continue cooking until the noodles are tender and the sauce becomes creamy and glossy.
Top it off: Finish with crispy bacon, egg yolk(optional) and parsley for the final touch.
