Irresistibly Moist And Soft Blueberry Banana Bread
  1. Preheat the oven to 350F (180C). Line a 9-inch loaf pan with parchment paper. Lightly toss the blueberries in flour.

  2. In a large bowl add the bananas cut in large pieces and mash using your hand mixer or a fork. You don't have to perfectly mash them, small pieces are totally ok in the batter.

  3. Add the sugar, eggs, vanilla extract, lemon zest, and beat some more. Add the melted butter while mixing.

  4. Sift the flour, baking powder, baking soda, and salt in the bowl and mix until just combined. Don't overmix.

  5. Fold in the blueberries (tossed in flour). Pour into the prepared pan. Top with a handful of blueberries (NOT tossed in flour or they might stay white on top), and sprinkle with crystallized sugar if you like (optional).

  6. Bake for about 50 minutes in the middle part of your oven, or until a toothpick inserted comes out clean. Cool completely, slice, and enjoy.
