Grate your tofu then add it to a baking tray with the paprika, tamari & msg, toss to coat then bake at 200°C for 25-30 minutes until golden & crispy in parts
Meanwhile, add the onion, garlic, chipotle paste, ground coriander, cumin, sugar, lime juice & vegetable stock to a blender & blitz until smooth
When the tofu is cooked, pour over the marinade, stir so everything is coated then cover with foil & return to the oven at 160°C for another 30 minutes
For the guacamole: add the avocado to a bowl & mash with a fork until creamy but not completely smooth. Stir in the coriander & lime juice with a pinch of salt & set aside
When the tofu is ready, line a baking sheet with corn tortillas then divide the tofu mixture on top of each one. Fold the tortillas over so they resemble a folded taco then place back in the oven at 200°C for 10-15 minutes, flipping half way, until the tortillas are golden & crisp on both sides
Serve the tacos with some guacamole, pink pickled onions, fresh coriander & a squeeze of lime juice
