Cake batter
Soaking syrup
Preheat the oven to 170C
Mix sugar with the zest. Cream sugar with the butter. Add add the eggs then the cream
Sift the flour, baking powder and salt into to the egg mixture.
Pour the mixture into a buttered cake tin. Add thin slices of butter at the top for an even split and bake for 1 hour
While the cake is baking prepare the soaking syrup by placing all ingredients in a saucepan, bring to the boil and set aside.
Soak the lukewarm cake with the cooled syrup.
