Air fry the rice mixture at highest temperature for 8 minutes until crispy
Blitz together 75g cottage cheese, 25g light sweet chilli sauce, and 10g hot sauce in a blender to make bang bang sauce
Combine 100g cucumber, 50g edamame, 100g cooked chicken, 30g pickled red onion, and 2 spring onions in a bowl
Top the salad with crispy rice and drizzle with bang bang sauce
Garnish with ½ tsp sesame seeds
