Crispy Rice Bang Bang Chicken Salad
  1. Combine 120g microwave brown rice with 1 tbsp soy sauce

  2. Air fry the rice mixture at highest temperature for 8 minutes until crispy

  3. Blitz together 75g cottage cheese, 25g light sweet chilli sauce, and 10g hot sauce in a blender to make bang bang sauce

  4. Combine 100g cucumber, 50g edamame, 100g cooked chicken, 30g pickled red onion, and 2 spring onions in a bowl

  5. Top the salad with crispy rice and drizzle with bang bang sauce

  6. Garnish with ½ tsp sesame seeds
