Stir Fry Bitter Melon with Chicken

  1. Marinate chicken thigh with light soy sauce, sugar, minced ginger, corn starch, and cooking oil

  2. Prepare the sauce: hoisin sauce with chicken broth

  3. Prepare the starch slurry

  4. Heat cooking oil in wok and stir fry minced garlic for 10 sec.

  5. Add marinated chicken and stir fry for 4-5 min until cooked. Remove from the wok.

  6. Add 1 TB oil to the wok and minced ginger for 10 sec.

  7. Add sliced bitter melon to the wok

  8. Add premixed sauce and simmer for 3 to 4 min.

  9. Add fresh diced red chili pepper to the mixture, simmer an other min.

  10. Add thickening sauce to achieve desired consistency

  11. Stir fry until bitter melon is cooked and sauce coats all ingredients

  12. Serve
