Roasted Balsamic Winter Vegetables
  1. Preheat the oven to 450 degrees F.

  2. Scatter the vegetables evenly on a half sheet pan. They should fill the pan in a single layer.

  3. In a small bowl, whisk together all the ingredients for the dressing. Drizzle the dressing over the vegetables and toss to coat evenly.

  4. Spread the vegetables into an even layer and bake for 35 to 40 minutes until tender and golden.

  5. Season to taste with additional salt and pepper, if needed. Serve warm.
