In a large bowl, mix together the zucchini, cottage cheese, almond flour, Parmesan, eggs, garlic powder, onion powder, salt, pepper, and parsley until well combined.
Heat olive oil in a skillet over medium heat. Drop spoonfuls of the mixture into the skillet, flattening slightly to form fritters.
Cook for 4-5 minutes on each side, or until golden brown and crispy. Drain on paper towels before serving.
