Preheat your oven to 375°F (190°C).
In a bowl, combine the chopped sorrel, feta cheese, cream cheese, fresh dill, minced garlic, salt, and pepper. Mix until well combined.
Take each chicken breast and create a pocket by slicing it horizontally. Fill each pocket with the sorrel and feta mixture. Secure the openings with toothpicks or tie with kitchen twine.
In a skillet over medium heat, add olive oil. Once hot, add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.
Transfer the seared chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and no longer pink inside.
Remove the toothpicks or twine, slice the chicken, and serve warm with your choice of sides.
