Thinly shred the cabbage and add it to a large bowl along with the arugula, cucumber, scallions, cilantro, mint, sesame seeds, and chopped peanuts. The key is to ensure the cabbage is super thinly shredded (I used a mandolin) and finely dice the rest of the ingredients.
Add the ginger, garlic, mayo, rice vinegar, sesame oil, soy sauce or tamari, salt, and pepper to a blender or food processor. Blend until smooth and creamy.
Pour the dressing over the salad and toss really well until everything is coated.
Let it sit for 5-10 minutes so the cabbage softens slightly and absorbs all the flavor.
Add your favorite protein like grilled chicken, steak, shrimp, salmon, tofu, or edamame and enjoy.
