Preheat oven to 180°C (350°F). Lightly grease a baking dish or pie pan.
Heat olive oil in a pan, cook onion and garlic until soft. Add spinach and cook until wilted. Let cool slightly.
In a bowl, whisk eggs, cottage cheese, milk, salt, pepper, and spices.
Stir in cooked spinach mixture and shredded cheese.
Pour into prepared dish and bake for 30–35 minutes, until set and lightly golden.
Let it rest 5–10 minutes before slicing.
