Line a large baking sheet with parchment paper.
In a large mixing bowl, add chopped dates, nuts, coconut, and peanut butter. Stir well to combine. Form into small clusters and add to parchment-lined baking sheet. Freeze for 15-20 minutes.
Add chocolate to a microwave-safe bowl. Heat in 20-second intervals until melted. Dunk each date cluster into chocolate, shaking off an excess, and place back on baking sheet. Immediately sprinkle over flaky sea salt.
Freeze for another 10 minutes until chocolate is set.
Store clusters in an airtight container in the freezer for up to 1 month.
