Mix 50g sugar + 25g water in a microwave-safe bowl.
DO NOT STIR. Just swirl gently if needed.
Microwave on high for 3 minutes.
Check the color — if not caramel brown, heat in 10-sec intervals.
Pour immediately into a bowl lined with parchment paper.
Add 3g baking soda, and stir quickly.
Watch it bubble and grow — this is the honeycomb magic!
Let it cool completely.
Smash into pieces and enjoy on top of your coffee or dessert!
