Carrot-mozzarella Baked Rounds
  1. Grate carrots and squeeze out excess liquid

  2. In a bowl, mix carrots, eggs, mozzarella, onion & garlic powders, salt, and pepper until well combined

  3. Divide into 4 portions on a parchment-lined tray; flatten into rounds

  4. Bake at 375°F (190°C) for 20-25 minutes until set and lightly golden

  5. Rest 10 minutes
