Thinly slice your cucumber, yellow onion, and green onions.
Chop your chicken breast into ½ inch cubes.
In a bowl, mix together your chicken, minced garlic, soy sauce and set aside.
In a blender, add your tofu, gochujang paste, and salt and pepper to taste and blend to make your sauce. Don’t over blend or else it will become too thin.
In a pan coated with spray oil on medium heat, cook your chicken.
In a pot of boiling water, cook your noodles. Once cooked, immediately transfer them to cold water.
In a bowl, place your noodles, pour your sauce on top, and top off with your chicken and veggies and enjoy!
