Veggie Cheez-it
  1. Finely shred carrot and zucchini and press out some of the moisture with a towel. Grate Parmesan and sprinkle some on a cookie sheet lined with parchment paper.

  2. Top the Parmesan with the veggies in an even layer. Add a good layer of more Parmesan on top of the veggies

  3. Sprinkle black pepper, oregano, garlic powder evenly over the cheese.

  4. Place in oven preheated to 425 until golden brown.

  5. Remove and flip onto another sheet of parchment paper, add more Parmesan and put back in the oven.

  6. Remove and cut into pieces then put back in the oven.

  7. Remove crackers as the finish and keep cooking the ones that need it until done.
